Summer rolls (also knows as fresh spring rolls or Vietnamese rice paper rolls) are traditionally made with crunchy raw vegetables and prawn or pork belly wrapped in thin rice papers. It is easily one of the healthiest snacks or lunches you can prepare on short notice. Packed with bright fresh flavors, small calories and devoid of any gluten or dairy, you’ll want to keep bringing this summer favorite on your menu frequently.

I personally love my summer rolls packed tightly with crispy veggies, slightly tangy with vinegar and left bare otherwise to let the filling speak for itself. Masking the flavors of punchy vegetables like beets, carrots, cucumbers isn’t a wise idea, you could add aromatics and herbs to enhance the flavors in your dipping sauce of course.
The peanut dipping sauce happened to be a delightful innovation in my kitchen when I didn’t have any peanuts or jaggery that the traditional sauce called for, and I used peanut butter instead. This sauce is to die for, and the dish is completely vegan if you wish to forego the meat fillings like I did.

I thought of making these one night when a couple of my favorite humans stopped by unexpectedly and crowded around my kitchen island wanting to catch up while I hooked them up with dinner. The rice paper wrappers were sitting in my pantry, unopened and forgotten, and I had some juicing vegetables sitting in my fridge. With a few quick matchstick-juliennes and vinegar-peanut oil splashes, we were ready to roll. It made for a super fun girls’ night and dinner was ready in no time.
Word of caution on the water soak for rice paper – it will be hard to handle and tear easily if it gets soggy. You need to only dip them in a shallow container of water for about 1-2 seconds before taking them out into the palm of your hands and filling them with veggies. Wrap them like you would a burrito – fold one side, fold the bottom up, top down and then the other side. Easy peasy!

Peanut-Sesame Dipping Sauce
Instructions
  1. Fill a shallow dish (large enough to hold the rice paper wrapper) with warm water.
  2. Prepare the vegetables by slicing them thinly or julienne them where necessary. Feel free to boil the beetroot while preparing the other raw vegetables and slicing the beetroot at the end
  3. Sprinkle the rice vinegar and sesame oil over the vegetables, cilantro and scallions, and let them sit a few minutes
  4. Fill a shallow dish (large enough to dip the rice paper wrapper in it) with water
  5. Handle one rice paper at a time, by dipping them into the water and taking them out after 1-2 seconds. The wrapper will be soaked and slightly slippery
  6. Place the wrapper on the palm on your hand, place the filling into the middle of the wrapper and fold like a burrito. Tuck one side in, bottom up, top down, other side tucked in
  7. Sprinkle with sesame seeds and serve with dipping sauce
Peanut Sesame Dipping Sauce
  1. Blend together all the ingredients required for the peanut dipping sauce. Add more water if required, to achieve desired consistency
  2. Sprinkle crushed peanuts and sesame seeds to garnish before serving
